Lactose molecule rotating. Lactose, or milk sugar, is a disaccharide formed of a glucose molecule linked to a galactose molecule. It is abundant in milk, and all young mammals use it as a source of energy. In many mammals and a large number of humans, though, the enzyme responsible for its breakdown, lactase, is not produced into adulthood, resulting in lactose intolerance.
