Chia seed (Salvia hispanica) soaking in water. Chia seeds are hydrophilic, and can absorb up to 12 times their weight in liquid. When soaked, the seeds develop a mucilaginous gel-like coating. Chia seeds are rich in omega-3 fatty acids and numerous vitamins and minerals, and are traditionally eaten in Mexico and the southwestern United States. | |
