Enzymatic fermentation. Animation 3 of 4, showing the molecular basis of fermentation and its catalysis by the enzyme zymase. This animation shows the enzyme zymase (red and yellow) and a glucose molecule (red, black and white). Hydrogen bonds form between the glucose and the zymase. The resulting reaction produces two molecules of ethanol (C2H5OH) and two molecules of carbon dioxide (CO2). This enzyme occurs in yeast, with yeast fermentation used in the production of foods and beverages such as bread and beer.
