The process is known as lactate fermentation. The starting molecule is the simple sugar glucose (top left). The process of glycolysis converts this into pyruvate (pyruvic acid, centre right). Anaerobic fermentation produces lactate (lower left). The process includes interconversion of NADH (reduced nicotinamide adenine dinucleotide) and NAD-plus.
