Caramelization of sucrose, 3 of 4. A crucible with sucrose (table sugar, C12H22O11) is heated over a Bunsen burner flame. Sucrose melts and undergoes caramelization, resulting in characteristic brown colour. Caramelization is chemical decomposition in the absence of oxygen (pyrolysis). It involves several types of reactions that result in many products. Upon further heating, caramelized sugar boils and even catches fire and burns. | |
