White rice (Oryza sativa) is brown rice with the bran (aleurone and pericarp) and germ removed. The process to produce white rice, known as polishing, extends the shelf life and many consumers prefer its taste and texture. However, the bran and germ contain a high proportion of the fibre and nutrition in the grain. It is grown in flooded fields called paddys. | |
