Durum wheat (Triticum turgidum var. durum) is used in the manufacture of pasta. It is grown in the Mediterranean basin and France is considered one of the best durum producers for pasta quality wheat. The European Union is the largest producer in the world, with the highest production from Italy and France. Durum wheat is cultivated in many other countries; mostly as new crop, because the price is 20% higher but these attempts are not always successful because the crop is different to the common wheat crop, with different species and agronomy management.
