Clary cut and drying. Clary (Salvia sclarea) is farmed for essential oil called muscatel oil or sage clary used to flavour vermouth and liqueurs as well as a fixer in the perfume industry, soaps and in herbal medicines. It is a biennial plant with attractive flowers but whose scent is somewhat unpleasant. It is cut and left to dry for a few days to intensify the scent before shredding and transporting to a steam distillery where the essential oil will be extracted.
