A loaf of einkorn wheat has a premium price. Production of einkorn wheat is now very restricted but it is re-gaining a following in the South of France where this ancient variety has always been grown. The seed head is very small and the grains are not easy to detach from the husk - the lemma and palea. It has higher protein than modern wheats as well as higher levels of phosphorous, potassium, fat, beta-carotene and pyridoxine. It is often grown as a single year crop in rotation with lavendin. | |
