They are an extremely rich source of amino acids as well as iron,fibre,vitamins and minerals. In ancient China the health benefits of shiitake mushrooms were well known. During the Ming dynasty (1368-1644) it was decreed that only the emperor and his family could eat them. The mushrooms were consequently known as "emperor food".
