Adulterated food is where non-food materials are added to increase the bulk or weight,sometimes with a decrease in food safety or quality. The man standing at a dining room table is using a 'Milk Tester' with 'High Water Mark',a 'Sand Extractor' over a sugar bowl,and a 'Butter Tester',as well as a microscope and a retort. He has a book titled 'Chemistry' in his coat pocket.
