Gas chromatography food research. US food chemist Roy Teranishi (1922-2000) sampling the headspace over fresh grapes before injecting a sample into a gas chromatograph. Teranishi was a Research Chemist and Research Leader at the Western Regional Research Center,of the Agricultural Research Service of the US Department of Agriculture from 1954 to 1997. He studied many aspects of flavour chemistry and volatile plant constituents. He pioneered the use of capillary gas chromatography and mass spectrometry to identify individual chemicals contributing to odour and flavour. Photographed in 1963 | |
