Fake milk. 19th-century artwork and poem on the subject of fraudulent practices relating to the sale of milk. The poem describes how water mixed with chalk would be sold as milk. Pure milk is shown at right,with fake milk from a 'Chalk Farm Dairy' at left. The standpipe labelled 'The Cow with the Iron Tail' recalls an 1850 essay of that name by Charles Dickens on the subject of milk dilution and adulteration.
