Mussel growing. Worker 'planting' mussels at low tide on a mussel farm. There are a variety of methods used for growing mussels. This farm uses the intertidal growth,or bouchot, technique, which uses pilings (upright wooden poles, known in French as bouchots) placed in the sea. The mussels grow on ropes tied in a spiral on the pilings, while mesh netting underneath prevents the mussels from falling away. This method needs an extended tidal zone.
