Trans fat food research. Physiologist sorting vials of plasma and serum stored at -80 degrees Celsius that will be used for lipid (fat) analyses to determine the individual trans fats levels of specific foods. Trans fat is the common name for unsaturated fat with trans-isomer fatty acids. Research in humans shows that these fats raise serum cholesterol,leading to the U.S. Food and Drug Administration requirement for food labels to show trans fatty acid content.
