Zebra chip disease research. Scientists comparing crisps from a healthy potato plant and one infected with zebra chip disease. The disease gets its name from the dark stripes that appear on the potato when it is fried. The stripes are due to starch in the potato being converted to sugar and then caramelising on cooking.
