Potato blight. Potatoes covered with the mould Phytophthora infestans,also known as potato blight. The blight can be seen here as dark brown regions on the skin of the potato which continue into the flesh,visible on the cross- sections. Mould on potatoes originates as fungal spores which settle on damaged areas of the skin of the vegetable,especially in wet weather. The spores germinate,penetrate into the vegetable and produce a mass of growth using the flesh of the potato as nourishment.
