Heating sugar and salt. Crucibles with sucrose (table sugar, C12H22O11, left) and sodium chloride (table salt, NaCl, right) are heated over a Bunsen burner flame. Starting at about 170 C, sucrose undergoes caramelization (decomposition), resulting in characteristic brown colour. On the contrary, no apparent changes to the sodium chloride are evident. Sodium chloride is an ionic compound that has a high melting temperature, 800.7 C, that is not reached in this setup. | |
