Water boils at room temperature. A liquid boils when its vapor pressure is equal to external gas pressure. Vapor pressure generally decreases with decreasing temperature. Therefore, when the gas pressure is decreased so is the temperature at which the liquid boils. This effect is demonstrated here by using a vacuum pump to evacuate air above water at room temperature in a Büchner flask. When the pump is turned on, the pressure drops very quickly and the water starts to boil. Vapor pressure of water is 24 torr at 25 C. | |
