Camargue black rice. Black rice (Oryza sativa), is a whole grain rice, that is it has not had the bran (aleurone and pericarp) and germ removed. The very high anthocyanin content colours both the pericarp and grain itself with a dark black/purple dye. This rice was once the preserve of Chinese emperors. It should not be confused with wild rice (Zizania aquatica) a different family of North American grass. This organic rice is grown in the south of France, in the region around the mouth of the River Rhone and the Camargue marshes. | |
