Hazel Katherine Stiebeling (1896-1989), American nutritionist. Stiebeling received her MA in nutrition in 1924 and her PhD in chemistry in 1928, both from Columbia University. In 1930 she joined the USDA Bureau of Home Economics as head of the Section on Food Economics. Stiebeling introduced daily dietary allowances of vitamins and minerals so that diets could be measured against human requirements. These allowances also helped her design plans for low income families that would provide nutritionally adequate diets. | |
