Extracting agave sap. Early 20th-century artwork. The sap (aguamiel) is being extracted to make pulque,an alcoholic beverage made from the fermented sap of the maguey (Agave americana) plant,native to Mexico and the southern USA. The sap collects in the centre of the plant,and here an elongated gourd is being used as a tube to suck the sap out. The liquid is collected twice a day,in volumes of several litres to be placed in fermentation vats.
