Alpine dairy cows. Dairy cows grazing on grass in an alpine meadow. This seasonal grazing takes place between May and September,allowing land at lower elevations to be used for other purposes. The thinner air at these higher elevations (typically over 2000 metres) reduces the milk yield of the cows,but the milk produced is healthier. Reasons for this include the composition of alpine flora and changes in the metabolism of the cows due to the high elevation. The resulting alpine cheeses are considered a delicacy.
